The famous movie Gladiator was loosely based on the characters of the Roman general and statesman M. Nonius Macrinus and of other real people of that period, so the tomb has been called 'tomb of Gladiator'. Due to preservation problems, this important Mausoleum is going to disappear again under tons of mud, since it will be re-buried, as other important Roman monuments, ie. Aquileia, Pompeii houses, Altinum etc.

Cheese and fish Tyrotarichum pie: a simplified version

We want to thank our SmartCgArt friend Pauline Richard, who has prepared this modern version of this ancient Roman recipe.

Tyrotarichum, Tyrotarica or Patella Thirotarica, i.e. cheese and fish [in Latin it is pronounced tyrotar-ì-chum, in Greek tyrot-à-richum]: another famous ancient Roman recipe but with a Greek origin. Tyro [Greek] means 'cheese' Tarichum [Greek] means 'salted fish'. Patella means that it must be cooked in a pan and/or receive the shape of a pan.

A simplified version, because most of you have not been initiated in the mysteries of ancient Roman garum, of quick garum, of the typical Roman treatment of stock and broth and of the traditional Roman cooking methods.

Anyhow, even with a simplified version, we'll be able to taste this famous ancient Roman dish.

Let's taste it!

TYROTARICHUM

Ingredients
325 gr [without oil] tuna fish in olive oil
325 gr breast of chicken
4-5 livers of chicken or of duck
125 gr mackerel in olive oil
2 hard boiled eggs
325 gr soft cheese i.e. 'caciotta' type cheese
10 eggs
2 cloves of garlic
pepper, salt, olive oil
celery [1 or 2 stems, as you like it]
parsley [the fresh one]
origany
flour
vinegar
crushed cumin

RECIPE

1. Cut the breast of chicken to pieces.

2. Mix together, in a bowl: the pieces of chicken, the 5 livers, the tuna fish, the mackerel and the 2 hard boiled eggs. With a fork finely mash tuna, mackerel and cut the hard boiled eggs to pieces. With a spoon well mix all the ingredients.

3. Use a big flat pan. Add olive oil. Heat the oil and, when it is ready, pour the mix into the pan.

4. Now prepare the spices: put pepper, salt, olive oil, 2 cloves of garlic, the stems of celery, parsley, origany in your Kitchen Robot Blender. Blend and add oil, if needed. Now pour this spices pâté on the other ingredients in the pan. With a spoon now mix all the ingredients together, while they are cooking and add a few drops of vinegar.

5. Let the ingredients cook: the pieces of chicken and the livers must be well cooked.

6. When they are ready, cut the 'caciotta cheese' to pieces and put them in the pan with the other ingredients. With a spoon mix again all the ingredients together.

7. After a few minutes [caciotta cheese must not be completely melt down], add a bit of flour to the ingredients in the pan and mix again with the spoon. Flour with oil must create a subtle crust.

8. Now you have well beaten your 10 eggs. You can add flour, so the pie will have a certain consistency.

9. Pour the 10 beaten eggs onto the other ingredients in the pan. Let it cook. Work in order to create a cheese and fish pie of a certain consistency.

10. When the pie is hot and ready, check salt, pepper and spices and, if you like it, pour a few drops of vinegar onto the pie. Finally sprinkle crushed cumin on the top of the pie.

11. Now you have your own tyrotarichum and you can serve it to your ancient Roman guests.

We want to thank our SmartCgArt friend Pauline Richard, who has prepared this modern version of these ancient Roman recipes.

Here another 2 delicious recipes for a real ancient Roman hors-d'oeuvre: Moretum and Epityrum [an original ancient Greek recipe, the Romans loved very much!].
...And remember to serve these dishes with a great number of spiced hard boiled eggs and lettuce, as in ancient Roman tradition.

Let's taste them!

1. MORETUM
______________________________________
Ingredients

CHEESE:
325 gr cheese [1 Roman pound] [buttermilk curd whey cheese, i.e. 'ricotta' or 'cottage cheese' type, or a soft cheese i.e. a 'caciotta' type cheese]
4 cloves of garlic
parsley [the fresh one]
rue [can be omitted]
coriander
salt, oil, vinegar

FLAT BREAD:
325 gr wheat meal [1 Roman pound] [or a mixture of pastry flour/all-purpose flour and of durum wheat semolina flour]
rosemary
thyme
pepper, salt, oil, water

RECIPE

1. Mash the ricotta or the soft cheese in a bowl.

2. Mash the 4 cloves of garlic with parsely, rue, coriander. Then knead the cheese with the spices. Add salt, oil, as needed, and just a few drops of vinegar, until you get a homogeneous cheese cake.

3. Leave it in the refrigerator.

4. Now prepare the flat bread.

5. Knead the flour with oil, water, salt, pepper, rosemary and thyme, until you get a homogeneous dough.

6. Pre-heat the oven. Prepare an oven tray with a silver foil, lay the rosemary and thyme in and oil them with olive oil.

7. Form flat loaves, by pressing them with your hand, and place them on the pre-prepared oven tray.

8. Bake in an oven 180 centigrade or 350 fahrenheit, possibly with both upper and lower oven sections heating, for around 30 minutes.

9. Serve the cheese with the flat loaves.

2. EPITYRUM [Greek: on the cheese]

The colour of the olives is important, since epityrum was served green, black, reddish or brown, according to the different types of olives used to prepare the recipe. So choose your colour(s):

green with green olives, black with black olives, etc.

Ingredients
650 gr [2 Roman pounds] spiced olives without the stone
oil, vinegar
coriander
cumin
fennel seeds
rue [can be omitted]
mint [not too much]

RECIPE

1. Put the olives in your Kitchen Robot Blender. Add all the spices. Blend and add oil and vinegar, as needed.

2. When you are done, put this olives pâté in a bowl. Cover with oil.

3. Leave it in the refrigerator.

4. In ancient Roman times it was usually served with various types of cheese [epityrum means on the cheese]. If you like it, you can add lettuce and asparagi with melted hot butter, salt and sesame.

The Liba of M. Porcius Cato the Censor.

We want to thank our SmartCgArt friend Pauline Richard, for having prepared this modern version of this ancient Roman recipe.

This is probably one of the most ancient recipes ever.

It was written, by the famous Cato the Elder or the Censor, one of the men, who defeated Hannibal during the Second Punic War.

Despite its ancientness, this recipe was a very popular recipe in Roman times and throughout its entire history, because the libum was [libum means for the sacrifice or offer for the sacrifice] a sacrificial loaf, used to honour the gods of the family and of the roads [Lares familiares and Lares compitales] on the day of their festivals. The libum was also used as a special birthday loaf.

As usual for this type of Roman recipes, add salt and taste, and, if the ricotta or the soft cheese are not wet enough, add a second egg.

1. Mash the ricotta or the soft cheese in a bowl.

2. Add the flour [you can use also a mixture of pastry flour/all-purpose flour and of durum wheat semolina flour, a common mixture also in modern bakery industry], the egg and salt [the quantity depends on the type of cheese you are using]. Knead the cheese with the flour and the egg, until you get a homogeneous dough.

3. Pre-heat the oven. Prepare an oven tray with a silver foil, lay the bay-leaves in and oil them with olive oil.

4. Form small loaves, like apricots, and place them on the pre-prepared oven tray.

5. Bake in an oven 180 centigrade or 350 fahrenheit, possibly with both upper and lower oven sections heating, for around 30 minutes.

This is the original 3rd/2nd century BC Cato the Censor's recipe for the Liba [De Agri Cultura or On Farming, 75]!

HOW TO SERVE

It is a delicious hors-d'oeuvre.

Eat them with hard boiled eggs served with a mashed garlic, salt, pepper, vinegar and olive oil sauce or/and with black and green olives mixed together, even better if they are mashed olives.

Possible modern variants

Instead of bay-leaves you can use rosemary.

The type of cheese, you use, can radically change the taste of the loaves: so you can use the cheese you love the best.

In Roman times the liba were used both as loaves and as cakes, according to the will and tradition of the people who made them.

So, if you want a cake, just add sugar or honey, instead of salt, and you'd better not use the caciotta type cheese. When serving them, pour honey on them and, if you like it, cinnamon, as for the Roman fried globi and fried bread recipes.

In the most traditional Roman families only men could lay in the couches. Women had to sit on the chair, usually the wife of the host. Other women and old men had to sit on chairs or stools. Romans didn't use knife as tableware, so knife was not a piece of tableware but of kitchenware: knife was used only in kitchen either by the cook/waiter to serve food. Food was usually prepared to be eaten with hands or spoons: meat and vegetables were usually served pre-cut. Fork was used by people at table only to serve themselves with food but not to eat. The use of fork and knife as in modern times has archaeological evidence for the Byzantine Era, but it was very rare. Regular modern use of fork and knife started XVII-XVIII century.

Inspired by the famous Kikugetsu-tei Pavilion in Ritsurin Park, Takamatsu - Japan a samurai villa built by the daimyo [i.e. feudal Lord] of Sanuki, Ikoma Takatoshi around 1640: Edo era, the Japanese Tea Pavilion is a high-detailed reconstruction of a classical, typical Edo era building.

Exteriors and interiors are perfectly reproduced, the 20 wooden sliding walls and the 4 wooden windows are all singularly movable or removable, as is in reality.

Faithful and accurate Reconstruction of the Ancient Roman Legionary Siege Tower [Model as described in Ancient Roman Military Handbook De Re Militari by Vegetius], according to the Scientific Data and the Archaeological Evidence.

The Roman standard Siege Tower had 3 sections: the lower level with a batterig ram, the intermediate level with room for soldiers and drawbridge device and an upper level for archers and missile troops.

As usual [see Vitruvius' and Vegetius' books], the tower was entirely covered with a mattress of cattle raw skin or with unfinished leather sacks stuffed with fire-proof materials or with materials treated to be fire-proof. These sacks and mattresses made the Siege Tower sufficiently fire-proof during attack, also because a group of soldier in the tower was always trained to extinguish fire using special leather water sacks [the siphones].

The head of the Greek and Roman Battering Ram usually had the ram snout in frontal position not the ram top-head [see the Olympia Ram Head, the Trajan's Colum Ram Head].

The Battering Ram Siege Tower probably appeared for the first time during the Empire of Augustus or Tiberius [first half 1st century AD] and was largely used during the wars of the end of the 1st century AD.

The Roman towers used before that date [i.e. Julius Caesar] probably were without incorporated battering ram but always with the heavy protective leather cover. So in the package you will find a second tower without Battering ram, to be used for reconstruction works about the era before Augustus' Empire.

Hi-DEF 3D Reconstruction of one of the most famous record cars "La Jamais Contente" ["The Never Satisfied"]. It was the first vehicle to break the 100 km/h [62 mph] barrier. It was an electric vehicle with a light alloy [partinium] torpedo shaped bodywork.

The land speed record was established on April 29/May 1, 1899 at Achères, Yvelines near Paris, France. Its creator and driver was the Belgian Camille Jenatzy. Jenatzy reached the speed of 105.882 km/h [65.792 mph].

People believed that this star signified the soul of Caesar received among the spirits of the immortal gods.

[In Greek and Roman culture Comet is an adjective determining the distinctive characteristic of a special Star. So a Comet Star is a Long-Haired Star and so it was represented on coins and monuments.]

The Perfect Model for Real Ancient Roman Environment Rendering!

The Temple of Caesar was begun in the Roman Forum in Rome in 42 BC by Augustus and dedicated on August 18, 29 BC, after the Battle of Actium: the Warships rostra attached to the temple were the ones from the defeated ships of Mark Antony and Cleopatra. As we know from Pliny the Elder and the coins struck by Augustus, the Temple was also the worship-place of the Comet Star, being the Comet Star the symbol of the deification of Julius Caesar.

This is an accurate reconstruction of the Temple of Caesar according to the reconstruction by the famous Roman Forum archaeologist Christian Huelsen: two frontal staircases, altar niche and composite order+corinthian pilasters.

The Art of Gladiators had, in reality, many and sometimes also very complicated rules. The normal fight was often without a cruel end and had to follow a series of prescribed schemes of fighting (all the positions were numbered etc.).

The death of the defeated gladiator depended on local or on imperial legislation. If the local governor or the emperor decided that the fight had to be without blood, no one of the gladiators had to be killed in any case. During the first years of regency of Nero and Nero was too young to lead the Empire, Seneca, who was in charge, strictly forbade death fights for Gladiators for a few years: they could fight but no one had to be killed.

When the fights had to be too cruel, the fights usually took place in the Military Amphitheatre and not in the public one. But sometimes even the soldiers were so disgusted by the blood show that they often cried against the governor very violently, asking to stop the bloodshed.

The Gladiators had a series of specific specialities.

The Thraex was the normal opponent for the Gladiator Murmillo and had a head of Griffin on his Helmet. The Griffin was the sacred animal of the Goddess Nemesis the goddess patroness of Gladiators.

The Thraex started using a lower position and used a typical curved sword called Sica or Falx.

All the fights had a referee who administered the game between the gladiators and all the fights were accompanied by the music of a little orchestra with an organ, Roman trumpets and flutes, as can be seen in many Ancient Roman mosaics.

Ancient Roman de luxe shoes cost about 600$ (Patricii's and curule magistrates' shoes) and 400$ (Senators' shoes) [data for III cen. AD]. All the other people were forbidden to use this type of shoes.

The Ancient Roman 'Purple Colour' was a Red colour with different levels of saturation.
